Satsumaimo - Japan's Sweet Potato (3'35")

The sweet potato is found worldwide. Among the 4,000 or so varieties, the Japanese satsumaimo is considered especially sweet, due to its high sugar content. Traditionally eaten baked, because of its sweetness satsumaimo is now also being used to make new kinds of desserts. At a major producing area, Kushima in Miyazaki, we discover how the potatoes are cured to protect from the results of damage during harvesting, then stored for two months to bring out their natural sweetness.
