Making handmade soba (buckwheat) noodles. Buckwheat flour is mixed with water to make a dough then rolled and cut into thin noodles. These are boiled and eaten either warm, in hot broth, or cold, dipped in a soy-based sauce. (Kiyonaga Hiroshi)
