Okonomiyaki Boy

  1. Okonomiyaki (one serving)
    eggs 2
    flour 1 teaspoon
    cornstarch 2 1/2 tablespoons
    milk (or water) 1/3 tablespoon
    cabbage 140 grams
    potatoes 80 grams
    shrimp 30 grams
    thinly sliced meat 50 grams (can be made without meat)
    tenkasu (deep-fried flour dough) 2 tablespoons (if available)
    dried bonito powder 1/3 tablespoon (if available)
    dried shrimp 2 tablespoons (if available)
    mayonnaise 1/3 tablespoon
  2. Sauce
    Use readymade okonomiyaki sauce if it's available. If not, you can make some by mixing these ingredients together:
    ketchup 2 tablespoons
    soy sauce 1 teaspoon
    Worcestershire sauce 1 tablespoon
  3. ingredients Face
    sliced cheese 1 slice
    simmered shiitake mushroom 1 (you could use 2 raisins instead)
    mayonnaise (put the mayonnaise in a tube to make it easier to draw the face)
    aonori (dried green seaweed) a little
    round shape cutters 2 (1 about 2.5 cm across, 1 about 1 cm across)

Directions

  1. Finely chop the cabbage, cut the potatoes into thin strips, and cut the shrimp into small pieces.
  2. Prepare the ingredients for the face: Fold the sliced cheese in two and cut out round pieces with the large shape cutter. With the small shape cutter, cut out pieces from the shiitake. (If you're using raisins, there's no need to cut them.)
  3. To make the batter, mix together the eggs, milk, and cornstarch.
  4. Add all the ingredients except the potatoes and shrimp to the batter and mix gently
  5. In a griddle (or frying pan) heated to 180 degrees Celsius, stir-fry the sliced potatoes and shrimp pieces in oil, then remove and add to the batter.
  6. Gently mix the batter. Spread oil over the griddle, wipe off the excess oil, and pour the batter on the griddle.
  7. Add the meat over the batter and cook thoroughly for about 5 minutes.
  8. Turn over and cook the other side thoroughly as well.
  9. To make the face: Spread the sauce on the pancake, place the cheese and shiitake (or raisins) to make eyes, sprinkle aonori on top for hair, and draw a mouth with mayonnaise.
